π Ingredients
(1 cup = 240ml)
β’ Sliced onion β 1 cup (240ml)
β’ Shallots β Β½ cup (120ml)
β’ Ginger β 1 inch piece
β’ Curry leaves β a few
β’ Red chilli powder β as required
β’ Tamarind β amla size ball
β’ Jaggery β small piece
β’ Salt β to taste
β’ Oil β 2 tsp

Step 1: Heat oil in a pan. Add sliced onions and sautΓ© for a minute.
Step 2: Add shallots, ginger and curry leaves. Cook until everything turns soft and slightly golden.

Step 3: Add red chilli powder and splash a little water so it doesnβt burn.
Step 4: Add tamarind, jaggery and salt. Mix well and cook everything together until combined.

Step 5: Let it cool completely then grind into a smooth chutney.
