- Fry potato cubes and cauliflower florets in oil until golden. Keep aside.

- In same oil add jeera and bay leaves. Let splutter.

- Add chopped onions. Sauté really well until golden.

- Add ginger garlic paste. Cook till raw smell disappears.

- Add chopped tomatoes. Cook until completely soft.

- Add red chilli powder, garam masala, coriander powder, jeera powder and salt. Mix well.

- Add little water and cook till masala is well cooked and oil releases.

- Add fried potatoes and cauliflower. Mix well to coat in masala.

- Add little sugar to balance flavours.
- Finish with lots of chopped coriander leaves.

- Serve hot with chapathi, roti, paratha, jeera rice or dal rice.
