Creamy Onion Capsicum Gravy | Rich Side Dish for Chapati & Naan

A rich, creamy Onion Capsicum Gravy made with a cashew-mint paste and fresh cream — the perfect flavourful side dish for chapati, paratha, roti or naan.

Ingredients
  

  • To Grind:
  • 1 handful mint leaves
  • 12-15 garlic cloves
  • 1 inch ginger
  • 2 small tomatoes
  • 7-8 cashews
  • Water as required
  • For the Gravy:
  • Oil
  • 2 large onions sliced
  • 1 large capsicum sliced
  • Salt as required
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • Water as required
  • 1/4 cup fresh cream
  • Chopped coriander leaves

  • 1 pan
  • 1 mixer grinder

Method
 

  1. Grind the mint leaves, garlic, ginger, tomatoes and cashews into a smooth paste with a little water. Keep aside.
  2. Heat oil in a pan and add sliced onions. Cook until nicely browned.
  3. Add sliced capsicum and cook until soft.
  4. Add salt, turmeric powder, red chilli powder, garam masala, coriander powder and cumin powder. Mix well.
  5. Add the ground paste along with a little water. Mix well, cover and cook.
  6. Cook until the raw smell disappears and the oil starts to separate.
  7. Add fresh cream and mix well.
  8. Finish with chopped coriander leaves and serve hot.

Notes

Brown the onions well — this is the flavour base of the entire gravy, don't rush it.
Grind the paste smooth — a lump-free paste gives the gravy its silky texture.
Cook until oil separates before adding cream — this ensures the raw masala smell is completely gone.
Add cream on low flame — high heat can cause it to split.
Adjust water to get your preferred gravy consistency — thicker for roti, slightly thinner for naan.
