Fresh aromatic Homemade Idli Podi

A traditional homemade Idli Podi made with roasted dals, garlic, curry leaves, sesame seeds and red chillies — fresher and more flavourful than any store bought version.

Ingredients
  

  • 1 cup urad dal
  • 1 cup chana dal
  • ¾ cup white sesame seeds
  • ½ cup fried gram pottukadalai
  • 25 dry red chillies adjust to spice level
  • 1 handful curry leaves
  • 8-9 garlic cloves crushed
  • 3 cubes asafoetida hing
  • 2 tbsp jaggery
  • Salt to taste
  • 1 tsp oil or light oil spray

Method
 

  1. Heat a pan with a little oil. Roast urad dal on low flame until golden and aromatic. Remove and cool completely.

  2. Roast chana dal the same way until golden. Cool completely.
  3. Roast dry red chillies with a little oil until crisp.
  4. Roast garlic, curry leaves and asafoetida separately.
  5. Roast white sesame seeds until they begin to pop. Remove immediately and cool.
  6. Let everything cool completely before grinding.
  7. Grind roasted red chillies separately into a fine powder.
  8. Grind fried gram, jaggery and salt together in another batch.
  9. Add roasted urad dal, chana dal, garlic, curry leaves and asafoetida. Grind to preferred texture.
  10. Add roasted sesame seeds and chilli powder. Pulse until well combined.
  11. Store in an airtight container.

Notes

Roast every ingredient separately — this is the most important step for flavour and aroma.
Always roast on low flame — high heat burns the dals and ruins the flavour.
Cool completely before grinding — warm ingredients make the podi oily and sticky.
Grind chillies separately first — this gives a more even spice distribution.
Adjust red chillies to your spice preference — 25 gives a medium spicy podi.
Store in an airtight glass jar — stays fresh for 3-4 weeks at room temperature.
