Ladies Finger Pachadi | Vendakkai Pachadi

A recipe with a beautiful story β€” inspired by a generous house owner in Hyderabad who gave a scared little girl comfort through food. Ladies finger pachadi made with freshly ground slightly coarse masala of fenugreek, mustard, jeera, coriander seeds, garlic and red chillies. Served with hot rice and ghee β€” pure South Indian bliss. Now made for my own kids who eat ladies finger so much better this way! 🀍πŸ”₯

Ingredients
  

  • 250-300 g ladies finger
  • 1 tomato chopped
  • Small piece tamarind
  • Turmeric powder
  • Salt to taste
  • Oil as needed
  • For the masala:
  • ΒΌ tsp fenugreek
  • Β½ tsp mustard
  • 1 tsp jeera
  • 1Β½ tsp coriander seeds
  • 6-7 garlic cloves
  • 5-6 red chillies adjust to taste
  • Curry leaves
  • Coriander leaves
  • 1 tbsp oil

Method
 

  1. Heat 1 tbsp oil. Fry fenugreek, mustard, jeera, coriander seeds, garlic and red chillies well.
  2. Add curry leaves and coriander leaves. SautΓ© well.
  3. Switch off and cool completely.
  4. Grind to a slightly coarse paste β€” don't over grind.
  5. In the same pan heat more oil. Add ladies finger and fry really well.
  6. Add turmeric and chopped tomato. Cook well until tomato softens.
  7. Add tamarind and salt. Cook till everything softens.
  8. Cool slightly and mix with the ground masala paste.
  9. Keep texture slightly coarse. Mix gently.
  10. Serve with hot rice and ghee.

Notes

Fry ladies finger really well β€” removes sliminess completely.
Grind masala to slightly coarse β€” don't make smooth paste.
Cool masala completely before grinding.
Cool ladies finger mixture before mixing with masala.
Adjust red chillies β€” reduce for kids.
Best eaten fresh same day.
Generous ghee with hot rice is a must! 😍
