Macaroni | Simple Homemade Indian Style Macaroni

Amma's famous homemade macaroni — the recipe everyone who visited our home asked for! Simple Indian style masala macaroni made with onion, carrot, capsicum, tomatoes and bold spices. No cream, no cheese sauce — just pure comforting homemade goodness. Ready in 10 minutes and absolutely delicious! 🍝🤍

Ingredients
  

  • 2 big onions chopped
  • 1 cup carrot chopped
  • ¾ cup capsicum chopped
  • 1 cup tomatoes chopped
  • 1.5 tsp red chilli powder
  • A little more than ½ tsp garam masala
  • Salt to taste
  • A little water
  • A little sugar
  • Fresh coriander leaves
  • 400 gms Macaroni
  • Oil as needed

Method
 

  1. Heat oil in a pan. Add chopped onions, carrot and capsicum.
  2. Fry everything really well until golden.
  3. Add chopped tomatoes. Fry again till everything cooks nicely.
  4. Add red chilli powder, garam masala and salt. Mix well.
  5. Add little water so masalas don't burn.
  6. Close and cook till vegetables and masalas cook really well.
  7. Add boiled macaroni. Mix well till coated in masala.
  8. Add little sugar and coriander leaves.
  9. Mix everything well and serve hot!

Notes

Fry vegetables really well — don't rush!
Add water with masalas to prevent burning.
Adjust masalas according to quantity of macaroni.
Boil macaroni al dente — slightly firm works best.
Little sugar at the end balances the spice beautifully.
Best eaten fresh and hot!
Reduce red chilli powder for kids.
