Potato Bhorta | Easy Lazy Day Recipe

The most flavourful mashed potato dish you'll ever make — fried garlic, crispy red chillies, golden onions and fresh coriander all mashed together by hand. My colleague's recipe for lazy days. Ready in 15 minutes and tastes absolutely amazing with hot rice. No potato? Use tomato instead!

Ingredients
  

  • 15-16 garlic pods
  • 8-10 dried red chillies
  • A few curry leaves
  • 2 big onions sliced
  • 4 boiled potatoes
  • A pinch of garam masala
  • A pinch of jeera powder
  • A pinch of red chilli powder
  • A whole bunch of fresh coriander
  • Salt to taste
  • Oil as needed

Method
 

  1. Fry garlic pods in oil until golden. Remove and keep aside.
  2. Fry dried red chillies in the same oil until crispy. Keep aside.
  3. Fry curry leaves until crisp. Keep aside.
  4. Fry sliced onions really well until they change colour completely to golden brown.
  5. Add the boiled potatoes to oil and add all masalas to the boiled potatoes — garam masala, jeera powder and red chilli powder.
  6. On a plate add boiled potatoes with masala, fried garlic, red chillies, curry leaves and golden onions.
  7. Add a whole bunch of fresh coriander and salt to taste.
  8. Mash everything together well by hand.
  9. Serve immediately with hot rice.

Notes

Fry each ingredient separately for best flavour.
Onion must change colour completely — don't rush.
Mash by hand for the best texture.
No potato? Swap with 2-3 ripe tomatoes.
Best eaten fresh immediately after mashing.
