- Fry garlic pods in oil until golden. Remove and keep aside.

- Fry dried red chillies in the same oil until crispy. Keep aside.

- Fry curry leaves until crisp. Keep aside.

- Fry sliced onions really well until they change colour completely to golden brown.

- Add the boiled potatoes to oil and add all masalas to the boiled potatoes — garam masala, jeera powder and red chilli powder.

- On a plate add boiled potatoes with masala, fried garlic, red chillies, curry leaves and golden onions.

- Add a whole bunch of fresh coriander and salt to taste.

- Mash everything together well by hand.

- Serve immediately with hot rice.

Notes
Fry each ingredient separately for best flavour.
Onion must change colour completely — don't rush.
Mash by hand for the best texture.
No potato? Swap with 2-3 ripe tomatoes.
Best eaten fresh immediately after mashing.
