Tomato Garlic Masala | Quick Side Dish for Chapathi Poori Dosa

A quick flavourful side dish learnt from a friend's anna who loves to experiment! Tomatoes and garlic cooked together with skin on — skin removed before mashing for an incredibly smooth masala. Spiced with chilli powder, garam masala and finished with lots of coriander. Ready in minutes and goes with chapathi, poori, dosa, idli and even rice! 🍅🧄🔥

Ingredients
  

  • 6 tomatoes cut in half
  • 10 garlic cloves
  • 2 tbsp oil
  • 1 big onion chopped
  • Curry leaves
  • 1 tsp chilli powder
  • ½ tsp garam masala
  • A pinch of sugar
  • Salt to taste
  • Lots of fresh coriander leaves

Method
 

  1. Heat oil in pan. Add tomatoes cut in half and garlic cloves.
  2. Close and cook until tomatoes turn completely soft.
  3. Remove tomato skin and mash tomatoes and garlic really well.
  4. Add chopped onion, curry leaves, chilli powder, garam masala, sugar and salt.
  5. Mix well and cook until oil starts releasing.
  6. Add lots of chopped coriander leaves. Give final mix.
  7. Serve hot with chapathi, poori, dosa, idli or rice!

Notes

Cook tomatoes with skin on — remove after for smooth masala!
Close and cook for even deep cooking.
Don't reduce garlic — 10 cloves gives incredible flavour!
Mash tomatoes and garlic really well before adding other ingredients.
Cook till oil releases — sign masala is perfectly done!
Generous coriander for freshness and colour.
Pinch of sugar balances tomato tanginess.
Use ripe red tomatoes for best result.
Goes with chapathi, poori, dosa, idli and rice! 😄
