Vegetable Soya Pulao | Easy One Pot Pulao

My go-to comfort pulao — light, fragrant and full of flavour just like mess and eatery style! Made with a freshly ground green masala of coriander seeds, jeera, garlic, ginger, coconut, green chillies, mint and coriander. Loaded with mixed vegetables and protein rich soya chunks. One pot pressure cooker — 2 whistles and done! Perfect for lunchbox and busy days. One pot, less work, more flavour! 🌿🔥🤍

Ingredients
  

  • For grinding:
  • 1 tsp coriander seeds
  • 1 tsp jeera
  • 15 garlic cloves
  • 1 inch ginger
  • ¼ cup fresh coconut
  • 6-7 green chillies
  • 1 handful mint leaves
  • 1 handful coriander leaves
  • For pulao:
  • 2 tbsp oil
  • 2 bay leaves
  • Small piece kalpasi
  • 1 tsp fennel seeds
  • 2 cinnamon pieces
  • 5-6 cloves
  • 1 star anise
  • 3 onions sliced
  • ½ cup soya chunks boiled
  • 1 cup mixed vegetables
  • Salt to taste
  • 1 tomato sliced
  • cups basmati rice soaked
  • 3 cups water
  • Little water for cooking vegetables

Method
 

  1. Grind coriander seeds, jeera, garlic, ginger, coconut, green chillies, mint and coriander into smooth paste.
  2. Heat oil in pressure cooker. Add bay leaves, kalpasi, fennel seeds, cinnamon, cloves and star anise.
  3. Add sliced onions. Sauté until light golden.
  4. Add ground paste and cook until raw smell disappears.
  5. Add boiled soya chunks and mixed vegetables. Add salt. Cook for a minute.
  6. Pour little water, cover and cook until vegetables are tender.
  7. Add sliced tomato and cook for a minute.
  8. Add soaked basmati rice and 3 cups water.
  9. Pressure cook for 2 whistles.
  10. Allow pressure to release naturally.
  11. Fluff gently and serve hot with raita!

Notes

Grind masala fresh — don't use store bought!
Cook ground masala well till raw smell goes completely.
Kalpasi gives authentic eatery style aroma — use if available!
Always boil soya in salted water and squeeze before using.
Soak basmati rice before adding.
Natural pressure release for fluffiest rice.
Add tomato after vegetables for fresh tangy note.
Fluff gently with fork after opening.
