Method
- Grind coriander seeds, jeera, garlic, ginger, coconut, green chillies, mint and coriander into smooth paste.

- Heat oil in pressure cooker. Add bay leaves, kalpasi, fennel seeds, cinnamon, cloves and star anise.

- Add sliced onions. Sauté until light golden.

- Add ground paste and cook until raw smell disappears.

- Add boiled soya chunks and mixed vegetables. Add salt. Cook for a minute.

- Pour little water, cover and cook until vegetables are tender.

- Add sliced tomato and cook for a minute.

- Add soaked basmati rice and 3 cups water.

- Pressure cook for 2 whistles.

- Allow pressure to release naturally.

- Fluff gently and serve hot with raita!
