The secret is the freshly ground green masala β coriander seeds, jeera, garlic, ginger, fresh coconut, green chillies, mint and coriander all ground into a smooth paste. That one paste transforms simple basmati rice into something that tastes like it came straight from your favourite eatery. π

How to Make Vegetable Soya Pulao
This pulao is all about that freshly ground green masala β everything else comes together beautifully around it!
Start by grinding all the masala ingredients β coriander seeds, jeera, garlic, ginger, fresh coconut, green chillies, mint leaves and coriander leaves into a smooth paste. This fresh green masala is what gives the pulao its incredible eatery style flavour. π

Heat oil in a pressure cooker. Add bay leaves, kalpasi, fennel seeds, cinnamon, cloves and star anise. Let everything release their beautiful fragrance.

Add sliced onions and sautΓ© until they turn light golden.

Add the ground paste and cook until the raw smell disappears completely. This step is important β cook the masala properly! π₯

Mix in the boiled soya chunks and mixed vegetables. Add salt and cook for a minute.

Pour a little water, cover and cook until the vegetables become tender.
Add the sliced tomato and cook for another minute.

Add the soaked basmati rice and pour in 3 cups of water.

Pressure cook for 2 whistles. Allow the pressure to release naturally β this gives the rice a beautiful fluffy texture! π
