Notes
Pro Tips for the Perfect No Onion No Garlic Potato Marsala
• Asafoetida is non-negotiable — this is what replaces the depth that onion and garlic would give; don’t skip it even if you have to add just a pinch
• Meal prep boiled potatoes — keep boiled potatoes in the fridge always; this masala then takes under 10 minutes from start to finish
• Mix of tomatoes — using country tomatoes along with regular ones gives a beautiful tangy richness that regular tomatoes alone can’t match
• Crushed coriander seeds — crush them coarsely not fine; the texture adds a lovely flavour pop to the masala
• Sugar balances everything — just a pinch balances the tanginess and rounds off the flavour perfectly
• Cook until oil separates — don’t serve before this step; oil separation means the masala is fully cooked and flavours have developed completely
