How to Make Creamy Paneer Bhurji

This paneer bhurji is incredibly simple — just one pan and 15 minutes!

Add butter and oil to a pan. The combination of butter and oil gives you that beautiful restaurant style richness without the butter burning. Fry the onions until they are nicely browned — take your time here. Well browned onions give the bhurji incredible depth of flavour! 😍

Add garlic, ginger and green chillies. Fry until the raw smell completely disappears.

Add capsicum and sauté really well until slightly softened but still with a little bite.

Add the chopped tomatoes and salt. Cook until the tomatoes are completely soft and have melded into the masala beautifully.

Now add pav bhaji masala, garam masala, red chilli powder, turmeric and dhaniya powder. Add a splash of water and cook for 5 minutes — letting all the spices cook properly and the masala come together. 😍

Add the grated paneer and mix really well — coat every bit of paneer in that beautiful masala.

Finish with fresh cream and fresh coriander leaves. Mix well.

Serve hot with chapathi, phulka, paratha or toasted bread. 🤍🔥

Simple. Creamy. Gone in minutes! 😄

Pro Tips for the Perfect Paneer Bhurji

  • Brown onions well — take your time frying the onions until nicely browned. This is the flavour base and makes a huge difference! Don’t rush.
  • Butter + oil combination — butter for flavour, oil to prevent burning. This combination gives restaurant style richness without any bitterness.
  • Grate the paneer — don’t crumble by hand! Grated paneer gives a softer more even texture throughout the bhurji. 😍
  • Add water with spices — a splash of water when adding the spice powders helps them cook properly without burning.
  • Cook spices for 5 minutes — give the masala time to cook properly before adding paneer. Raw spice taste ruins the bhurji!
  • Fresh cream at the end — add on low flame or after switching off. High heat can split the cream. This step is what makes it creamy and restaurant style! 🤍
  • Serve immediately — paneer bhurji is best eaten hot right off the pan. The texture and flavour are at their peak fresh! 😊
  • Don’t overcook paneer — once you add the grated paneer just mix well and finish. Overcooking makes paneer rubbery!

What to Serve With Paneer Bhurji

Frequently Asked Questions

Should I grate or crumble the paneer?
Grating gives the best texture! Grated paneer is softer, more even and coats the masala beautifully. Crumbled paneer can be uneven. Use a grater for the best results! 😍

Can I skip the fresh cream?
Fresh cream is what gives this bhurji its restaurant style creamy texture. You can reduce the quantity but don’t skip it entirely — it makes a significant difference! 🥛

Can I use store bought paneer?
Yes! Soak store bought paneer in warm water for 10 minutes before grating to soften it. Fresh homemade paneer gives the softest results but store bought works perfectly! 🤍

Can I make this without capsicum?
Yes — skip the capsicum if preferred. The bhurji will still taste amazing! But capsicum adds a nice crunch and freshness that works beautifully. 😊

Is this recipe spicy?
3 green chillies gives a medium spice level. Reduce to 1-2 for less spice or skip entirely for a mild version. The masalas give flavour without too much heat! 😊

How long does paneer bhurji last?
Best eaten fresh immediately. Can be stored in the fridge for up to a day but the texture changes slightly when reheated. Always fresh is best! 🤍
