My husband’s friend is an amazing cook. He makes the most incredible layered biryani — proper dum style, layered beautifully, cooked to perfection. I have watched him make it and it is genuinely impressive.
But I am a lazy girl. 😂
I love one pot meals. I love putting everything together, closing the cooker and walking away. The idea of layering and dum cooking is beautiful — but not for my lazy self! 😄
So I took his layered biryani inspiration and turned it into a one pot pressure cooker biryani. Same flavours, same love — but done my way. The lazy way. 😂🤍
I honestly don’t know if this matches his layered biryani. But what I DO know is — this one pot paneer biryani tastes absolutely outstanding. Restaurant style flavour, beautifully fragrant, paneer soaked in all that incredible masala — done in one pot with just 2 whistles.

How to Make One Pot Paneer Biryani
This biryani has two parts — the crispy fried onions and the biryani base. Both are simple and together they create something truly restaurant style! 😍
Step 1 — Fry the onions:
Slice 3 medium onions and fry in oil on low flame until nicely brown and crispy. This takes patience — low and slow gives you perfectly caramelised crispy onions that are the soul of any biryani! Cool completely and chop lightly if needed. Keep aside — half will go into the biryani and half will top it at the end. 😍

Step 2 — The biryani base:
In a pressure cooker heat oil. Add jeera, whole pepper, cloves, cinnamon, elaichi and bay leaf. Fry everything well until fragrant.

Add 3 sliced medium onions and fry really really well until golden. Add ginger garlic paste and a little water — cook until the raw smell completely disappears.
Add sliced tomato and cook till soft.
Add all the masalas — red chilli powder, garam masala, coriander powder, pepper powder, turmeric, salt and sugar. Mix and fry really well. Add a little water so masalas don’t burn.

Step 3 — Add paneer:
Add the paneer, half of the crispy fried onions and curd. Mix everything really well until the paneer is coated in all that beautiful masala.
Close the cooker without whistle for a few minutes on low flame — this lets the paneer absorb all the masala beautifully!
Add a pinch of kasuri methi handful of coriander leaves, handful of mint leaves
Once oil starts releasing — add water.

Step 4 — Add rice:
Soak basmati rice for 10-15 minutes before adding. For every 1 cup rice add 2 cups water.
Let the water boil then add the soaked rice. Pressure cook for just 2 whistles.
Immediately remove cooker from heat after the whistles — this stops the cooking and keeps the rice perfectly fluffy!
Open and top with the remaining crispy fried onions. 😍
Serve hot with raita! 🤍🔥

- Add sliced tomato. Cook till soft.

- Add red chilli powder, garam masala, coriander powder, pepper powder, turmeric, salt and sugar. Mix and fry well. Add little water.

- Add paneer, half fried onions, and curd. Mix really well.

- Close cooker without whistle on low flame for few minutes.
- Add pinch of kasuri methi Chopped coriander leaves chopped mint leaves . Once oil releases add water.

- Let water boil. Add soaked basmati rice.

- Pressure cook for 2 whistles.

- Immediately remove from heat after whistles.
- Open and top with remaining fried onions.

- Serve hot with raita.
