The secret is patience β 25 to 30 minutes of simmering. That’s what gives dal makhani its deep rich flavour. You cannot rush this one. But trust me β it is absolutely worth every minute. π€

How to Make Restaurant Style Dal Makhani
This dal makhani is all about building layers of flavour β each step matters!
Start by soaking whole urad dal and rajma overnight. Then boil both until completely soft. Keep aside.
In a heavy bottomed pan add butter. Add jeera and let it splutter. Add ginger garlic paste and a splash of water β cook until the raw smell completely disappears. π
Add Kashmiri chilli powder and red chilli powder. Cook well with a little water β Kashmiri chilli is what gives the dal its beautiful deep red colour without making it too spicy!
Now add the tomato puree and salt. Cook until the tomatoes are completely done and oil starts releasing β this is important! Don’t rush this step. The tomatoes need to cook completely for the best flavour. π₯
Add the boiled urad dal and rajma. Mix everything together.
Now pour in hot water and simmer for 25-30 minutes on low flame β stirring occasionally. This slow simmering is the secret to restaurant style dal makhani! The longer it simmers the deeper and richer the flavour becomes. π
Finish with garam masala, fresh cream and butter. Mix well.

- Soak overnight β always soak urad dal and rajma overnight. This is non negotiable for proper texture and cooking!
- Boil till completely soft β the dal and rajma need to be completely soft before adding to the gravy. Under cooked dal ruins the texture.
- Heavy bottomed pan β use a heavy bottomed pan for even heat distribution and to prevent burning during the long simmer.
- Cook tomatoes till oil releases β this is crucial! Don’t add the dal until the tomatoes are completely cooked and oil has separated. This is the flavour base.
- Hot water for simmering β always add hot water not cold water. Cold water disrupts the cooking process.
- Simmer on LOW flame β 25-30 minutes on low flame. Don’t rush on high flame! Low and slow is the secret to restaurant style dal makhani. π
- Kashmiri chilli for colour β Kashmiri chilli powder gives that beautiful deep red colour without excessive heat. Don’t skip or substitute!
