How to Make Soya Tomato Rice

This one pot rice comes together in three simple stages!

Step 1 — Make the spice paste:
In a mixer add ginger, garlic, green chillies, cinnamon, cardamom, cloves, mint leaves and small onions.
Grind everything into a coarse paste without adding any water.

Step 2 — Build the masala:
Heat oil in a pressure cooker.
Add mustard seeds and saunf — let them splutter.
Add 2 sliced onions and fry well.
Add the coarse paste and fry until the raw smell completely disappears.
Add sliced tomatoes, red chilli powder, turmeric powder and salt.
Mix really well and cook until the raw smell of masala goes and tomatoes are nicely cooked.
Add 1 cup boiled soya and mix well.
Close the cooker without the whistle and cook until oil starts to separate.

Step 3 — Cook the rice:
Add 1¾ cups water and 1 cup soaked rice. Mix gently.
Close the cooker and cook for 2 whistles on medium flame.
Open once pressure releases, fluff gently and finish with fresh coriander leaves.
Your super flavourful Soya Tomato Rice is ready! 🌕

Notes

Grind the spice paste coarse not smooth — the texture gives better flavour to the rice.
Do not add water while grinding — a dry coarse paste coats the masala better.
Cook masala until oil separates before adding rice — this is the key to flavourful rice.
I used Seeraga Samba rice — you can use any rice you prefer, adjust water accordingly.
Boil soya chunks in salted water and squeeze well before adding for best texture.
Let pressure release naturally for perfectly cooked fluffy rice.

Pro Tips for the Perfect Soya Tomato Rice

  • Coarse paste without water — always grind the spice paste dry and coarse; this gives the rice a better texture and deeper flavour than a smooth paste
  • Cook until oil separates — don’t rush this step; wait patiently until the masala is fully cooked and oil starts separating before adding rice
  • Boil soya properly — boil in salted water and squeeze out excess water completely before adding to the masala
  • Close without whistle first — cooking the masala closed without the whistle helps it cook deeper and richer before the rice goes in
  • Seeraga samba or basmati — both give great results; seeraga samba gives a more aromatic biryani-style finish
  • Natural pressure release — always let pressure release naturally for separate fluffy grains

What to Serve With Soya Tomato Rice

🥛 Onion raita — the classic pairing
🥗 Boondi raita — light and refreshing
🥒 Sliced onions with lemon — traditional and simple
🥗 Appalam or papad — adds great crunch
🍱 Perfect as is for lunchbox — stays fragrant and delicious for hours

Frequently Asked Questions

Can I use any rice instead of Seeraga Samba?
Yes — basmati, ponni, or sona masoori all work. Adjust water quantity and whistles based on your rice variety.

Do I have to boil soya before adding?
Yes — always boil soya in salted water and wash and squeeze well before using. This removes the raw smell and gives better texture.

Can I skip the whole spices?
The whole spices (cinnamon, cloves, cardamom) give this rice its biryani-style aroma. You can reduce but not skip entirely for best results.

Why cook without whistle first?
Closing the cooker without the whistle before adding rice helps the masala cook deeper and the oil to separate properly — this makes the rice more flavourful.

Can I make this without a pressure cooker?
Yes — use a heavy bottomed pot with a tight lid on low flame for 20-25 minutes until rice is fully cooked.
