How to Make OG Tomato Rice

This recipe has one important step β€” cook the tomato masala really well until oil separates. That’s the whole secret!

Step 1 β€” Build the masala:
Heat oil in a pressure cooker.
Add mustard seeds, chana dal, and green chillies. Once they splutter add sliced onions and sautΓ© until they soften.
Add chopped garlic and curry leaves, followed by sliced tomatoes.
Cook everything well until the tomatoes become completely soft.
Add salt, red chilli powder, turmeric powder, and garam masala.
Continue cooking patiently until the tomatoes break down completely and the oil starts separating.
This is the most important step β€” don’t rush it!

Step 2 β€” Cook the rice:
The onion tomato masala itself can be served with chapathi or poori at this stage β€” it’s that good!
Pour in the water and bring to a boil.
Add the soaked rice, mix gently, close the cooker and pressure cook for 3-4 whistles depending on the rice variety.
Garnish with chopped coriander leaves and serve hot.

  • 1 tsp chana dal
  • 3 green chillies

  • 6-7 garlic cloves chopped
  • Curry leaves
  • 6-7 tomatoes sliced
  • Jaggery optional
  • 1-1Β½ tbsp red chilli powder
  • ΒΌ tsp turmeric powder
  • A pinch of garam masala
  • Salt to taste
  • Coriander leaves
  • Rice:
  • 2 cups ponni rice soaked
  • 5-5Β½ cups water adjust for rice variety
