  • A pinch of asafoetida
  • Coriander leaves
  • Bajji/Bonda Mix as needed for batter

Method

  1. Heat oil and add mustard seeds, chana dal, curry leaves, green chillies, and onions. Fry well.
  2. Add chilli powder, turmeric powder, asafoetida, and a little water.
  3. Add the boiled potatoes and mash well until everything is nicely combined.

Notes

Cool the filling completely before shaping β€” warm filling is harder to shape into neat balls.
Make sure the batter is not too thick or too thin β€” it should coat the back of a spoon.
Fry on medium heat β€” high heat browns the outside too fast without cooking the batter through.
I used instant Bajji Bonda Mix β€” works perfectly and saves time!

Pro Tips for the Perfect Potato Bonda

  • Cool the filling before shaping β€” it holds together better and is easier to handle
  • Mash the potatoes well β€” no big lumps so the filling stays smooth inside
  • Medium heat is key β€” fry on medium so the bonda cooks evenly and turns golden all over
  • Don’t overcrowd the pan β€” fry in small batches for the crispiest result
  • Serve immediately β€” bonda is best eaten hot and fresh right out of the oil

What to Serve With Potato Bonda

β˜• Hot masala chai β€” the classic combo

🌿 Mint chutney β€” for an extra flavour punch

Frequently Asked Questions

Can I make the filling ahead of time?
Yes! You can make and refrigerate the potato filling up to a day aheaa. Just shape and fry when needed. But it’s always best to have it fresh

Can I make my own batter instead of Bajji Bonda Mix?
Absolutely β€” mix besan (chickpea flour), rice flour, chilli powder, salt, and water to a smooth coating batter. But the readymade mix is a great shortcut!

Can I bake these instead of frying?
Bonda is traditionally deep fried for that crispy texture. Baking won’t give the same result, but air frying at high heat works reasonably well.

Why is my bonda absorbing too much oil?
The oil may not be hot enough before you add the bonda. Always test with a small drop of batter first β€” it should rise to the top quickly.

Can I add other vegetables to the filling?
Yes! Peas work well mixed into the potato filling.

A Note From My Kitchen 🀍

Some snacks just belong to rainy evenings.

Potato Bonda is one of them.

Hot tea, a grey sky outside, and a plate of freshly fried golden bonda β€” honestly, nothing beats it.

I used instant Bajji Bonda Mix for the batter this time and it worked out perfectly. Quick, fuss-free, and just as delicious.

Sometimes the easiest version is the best version. 😊πŸ”₯
