How to Make Vetrilai Rice
This rice is made in two simple steps β the dry roasted powder and the tempering. Both come together beautifully.
Start with the powder. Dry roast urad dal, red chillies, fried groundnuts, coriander seeds, pepper, jeera and white sesame seeds together until golden and fragrant. Let it cool completely and grind into a coarse powder. Keep aside.
Now for the tempering. Heat oil in a pan. Add mustard seeds and channa dal β let them splutter. Add chopped cashews, red chillies, curry leaves and chopped garlic. Fry everything really really well until golden and fragrant. π
Now add the finely chopped vetrilai (betel leaves). This is an important step β don’t over fry the betel leaves! Just lightly coat them with the tempering β a few seconds is enough. Over frying will make them bitter and kill the medicinal properties.

Add the cooked rice and salt. Mix everything together gently.
Add the freshly ground powder and mix really well until every grain of rice is coated in that beautiful aromatic masala.
Serve hot with appalam. πΏππ€

Pro Tips for the Best Vetrilai Rice
- Dry roast on low flame β roast all the masala ingredients on low flame until golden and fragrant. Don’t rush and don’t burn!
- Cool before grinding β let the roasted ingredients cool completely before grinding for better texture and colour.
- Keep powder slightly coarse β don’t over grind into a fine powder. A slightly coarse texture gives the rice beautiful flavour and bite.
- Don’t over fry betel leaves β this is the most important tip! Just lightly coat the betel leaves in the tempering. Over frying makes them bitter and destroys their medicinal properties. πΏ
- Use day old rice β slightly dried out cooked rice works best. Fresh rice can become mushy when mixed.
- Adjust powder quantity β add more or less powder depending on how strong you want the flavour. Start with less and add more to taste.
