🛒 Ingredients
(1 cup = 240ml)
• Sliced onion — 1 cup (240ml)
• Shallots — ½ cup (120ml)
• Ginger — 1 inch piece
• Curry leaves — a few
• Red chilli powder — as required
• Tamarind — amla size ball
• Jaggery — small piece
• Salt — to taste
• Oil — 2 tsp

👨‍🍳 Instructions
Step 1: Heat oil in a pan. Add sliced onions and sauté for a minute.
Step 2: Add shallots, ginger and curry leaves. Cook until everything turns soft and slightly golden.

Step 3: Add red chilli powder and splash a little water so it doesn’t burn.
Step 4: Add tamarind, jaggery and salt. Mix well and cook everything together until combined.

Step 5: Let it cool completely then grind into a smooth chutney.
