Soya Chunk Curry Recipe | High Protein & Easy South Indian Style Curry

🛒 Ingredients

(1 cup = 240 ml)

  • 1 cup soya chunks (boiled & squeezed)
  • 1 tbsp oil
  • 1 tsp ginger garlic paste
  • 1 onion (finely chopped)
  • 1 tomato (chopped)
  • 1 green chilli
  • Few mint leaves curry leaves coriander leaves

Whole spices:

  • 1/2 tsp saunf
  • 1 maratti moggu
  • 1 small piece star anise

Spice powders:

  • 1 tsp red chilli powder
  • 1 tsp Kashmiri chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp jeera powder
  • 1/2 tsp garam masala
  • Salt to taste

👩‍🍳 Instructions

  1. Boil soya chunks in hot water for 5–7 minutes. Squeeze out excess water and keep aside
  2. Heat oil in a pan. Add saunf, maratti moggu, and star anise. Let them release aroma.
  3. Add chopped onion and sauté until golden.
  4. Add ginger garlic paste and cook until the raw smell disappears
  5. Add tomato and green chilli. Cook until soft and mushy.
  6. Add all spice powders and salt. Mix well and cook for a minute.
  7. Add the chopped mint leaves curry leaves coriander leaves
  8. Add boiled soya chunks and mix so they absorb all flavours.

  9. Add a little water, cover, and cook for 5–7 minutes.

  • Squeeze soya chunks well to avoid rubbery texture
  • Add mint for fresh flavour boost
  • Adjust spice level as per taste

Notes

  • Always squeeze soya chunks well to avoid rubbery texture.
    Adding mint gives a fresh and rich flavour.
    Adjust water based on how thick or gravy-like you prefer.
    Don’t skip Kashmiri chilli powder for good colour.
    Let it rest for a few minutes after cooking for better taste.
