How to Make Pulikaachal
Three simple stages β extract the tamarind, cook it down, add the roasted masala!
Step 1 β Extract tamarind:
Soak 250-300g tamarind in hot water for 20 minutes.
Squeeze and strain well to get a thick pulp.
Step 2 β Cook the tamarind:
Add the thick tamarind pulp to a pan.
Add salt, turmeric powder, green chillies, curry leaves, Β½ cup oil and jaggery.
Cover and cook on low flame for 20-25 minutes, stirring in between, until the mixture thickens beautifully.
Step 3 β Add the roasted masala:
Dry roast coriander seeds, cumin, pepper, fenugreek, white sesame, dry red chillies and a pinch of asafoetida.
Cool completely and grind finely.
Add this roasted masala powder to the cooked tamarind mixture and mix well.
Cool completely before storing in a clean dry glass container.
For Puliyodharai:
Temper mustard, chana dal, peanuts, curry leaves, green chilli and cumin in oil.
Add the required amount of Pulikaachal and mix with cooked rice.
Enjoy! β€οΈ

Notes
Cook on low flame only β patience is key; rushing on high flame will burn the tamarind mixture.
Stir in between β tamarind sticks to the bottom easily; stir every few minutes while cooking.
Cool completely before storing β any warmth inside the jar will reduce its shelf life.
Always use a clean dry spoon when taking out Pulikaachal β moisture is the enemy.
Store in a glass jar β not plastic; glass keeps it fresh longer.
Dry roast each spice separately on low flame for best aroma and flavour.
Pro Tips for the Perfect Pulikaachal
- Don’t reduce the oil β Β½ cup oil is what preserves the Pulikaachal for 2 months; less oil means shorter shelf life
- Low flame and patience β the tamarind needs to cook slowly and thicken gradually; rushing on high flame changes the flavour completely
- Cool before roasting spices separately β each spice has a different roasting time; roasting separately gives the best aroma
- Cool completely before storing β this is the most important step for long shelf life; even a little warmth causes spoilage
- Dry spoon always β never use a wet spoon to take out Pulikaachal; moisture ruins it
- Thick tamarind pulp β strain really well to get a thick concentrated pulp; thin pulp takes longer to cook and gives less flavour

Frequently Asked Questions
How long does homemade Pulikaachal last?
Stored in a clean dry glass jar at fridge it stays good for up to 2 months. Always use a dry spoon and keep away from moisture.
Can I reduce the amount of oil?
The oil is what preserves the Pulikaachal β reducing it will shorten the shelf life significantly. Keep it at Β½ cup for the best results.
How much Pulikaachal do I use for one serving of rice?
Start with 2-3 tablespoons for 1 cup of cooked rice and adjust to your taste preference.
Can I skip the jaggery?
Jaggery balances the tanginess of the tamarind beautifully. You can reduce the quantity but skipping entirely will make it very sharp and tangy.
Can I use this for idli or dosa too?
Yes β Pulikaachal mixed with a little sesame oil works as a great dipping accompaniment for idli too!
What rice works best for Puliyodharai?
Cooked and slightly cooled rice works best β hot freshly cooked rice can become mushy when mixed. Seeraga samba or regular raw rice both work beautifully.
