How to Make Potato Bonda
Making Potato Bonda at home is easier than you think β just three simple stages.
Step 1 β Make the filling:
Heat oil and add mustard seeds, chana dal, curry leaves, green chillies, and onions. Fry until onions are soft.
Add chilli powder, turmeric powder, asafoetida, and a little water.
Add the boiled potatoes and mash well until everything is nicely combined.
Mix in coriander leaves and let it cool.

Step 2 β Shape:
Divide the filling and shape into smooth round balls.

Step 3 β Fry:
Dip each ball in Bajji Bonda batter and fry in hot oil until crispy and golden.
Serve immediately with coconut chutney or tomato ketchup!

Cool the filling completely before shaping β warm filling is harder to shape into neat balls.Make sure the batter is not too thick or too thin β it should coat the back of a spoon.
Fry on medium heat β high heat browns the outside too fast without cooking the batter through.
