How to Make Instant Tomato Gothsu
This gothsu is so simple β one pan, a few ingredients and 10 minutes!

Take a pan and heat oil. Add mustard seeds and channa dal β let them splutter and the dal turns golden.
Add 2 sliced onions and 1 slit green chilli. Fry them really really well until the onions turn golden and caramelised. Don’t rush this step β well fried onions are the base of great gothsu!
Now add 5 chopped tomatoes and sautΓ© until they become completely soft and mushy.
Now the most important step β add sambar podi, jeera podi and salt. Fry everything really really well until the raw smell of the spice powders is completely gone. This step is crucial! Don’t add water before the raw smell disappears completely. π
Only then add water β about 2 cups. Add curry leaves.
Let it simmer nicely β the flavours come together beautifully and the gothsu thickens slightly as it simmers. π
You can add more or less water depending on the consistency you prefer β thick and chunky or slightly runny. Both are perfect!
Serve hot with idli or pongal. π€π₯

- Fry onions really well
- This step is important β fry sambar podi and jeera podi really really well until the raw smell completely disappears before adding water. This is non negotiable!
- Add water only after raw smell goes β adding water too early will not cook the spice powders properly and the gothsu will taste raw.
- Use ripe red tomatoes β the riper and juicier the tomatoes the better the gothsu! 5 tomatoes gives a generous rich base. π
- Curry leaves at the right time β add curry leaves with the water for the best aroma and flavour.
- Simmer properly β let the gothsu simmer after adding water. The simmering is what brings all the flavours together and thickens it beautifully.
- Adjust consistency β add more water for thinner gothsu, less for thicker. Both versions taste great! π
- Sambar podi quality matters β use a good homemade or quality store bought sambar podi for the best flavour. π€
