How to Make Pottukadalai Laddu

This is one of the easiest sweets you’ll ever make β€” no gas, no stove, just simple steps that anyone can follow.

Start by grinding the fried gram (pottukadalai) in your mixie to a fine powder. Then grind the sugar separately to a fine powder as well. Grinding them separately gives you better control over the texture of each.

Sieve both the powders and add them together in a large bowl. Add the cardamom powder and mix everything together.

Now heat the ghee in a small pan and fry the chopped cashews until golden. Add the hot ghee and fried cashews directly to the powder mixture.

Mix everything together really really well. Now here is the most important tip β€” shape into laddus while the mixture is still medium hot. Don’t wait for it to cool completely because once it cools shaping becomes very difficult and the mixture won’t hold together.

If the mixture feels too dry to shape β€” add a little more warm ghee. Just a little at a time until it comes together perfectly.

Shape into round laddus and let them cool completely.

That’s it. No gas. No cooking. Just pure homemade goodness. 🀍

  • Grind fried gram and sugar separately β€” gives better texture and consistency to the laddu.
  • Sieve both powders β€” removes any coarse bits and gives you a smooth fine mixture.
  • Shape while medium hot β€” this is the most important step! Once the mixture cools it won’t bind together. Work quickly and shape immediately after adding ghee.
  • Add ghee little by little β€” don’t add all the ghee at once. Add warm ghee gradually until the mixture just comes together.
  • Reduce sugar if preferred β€” 1 cup sugar gives a sweet laddu. Reduce to ΒΎ cup for a less sweet version.
  • Store in an airtight container β€” stays fresh for 3-4 days at room temperature.

A Note From My Kitchen 🀍

I cannot make this like Amma does. I have accepted that. πŸ˜„

But every time I make these laddus the ghee aroma fills my home and for a moment it feels exactly like being back in her kitchen as a child β€” watching her shape laddus with such ease, the cashews golden and fragrant, the whole house smelling like warmth and love.

Food does that. It takes you back in ways nothing else can.

I hope when you make these laddus they fill your home with that same warmth. And I hope someone in your home looks at you the way I used to look at Amma β€” with complete wonder at how you made something so beautiful so effortlessly. 🀍

Try it. You’ll surprise yourself. 😊
