How to Make Vegetable Soya Pulao

This pulao is all about that freshly ground green masala β€” everything else comes together beautifully around it!

Start by grinding all the masala ingredients β€” coriander seeds, jeera, garlic, ginger, fresh coconut, green chillies, mint leaves and coriander leaves into a smooth paste. This fresh green masala is what gives the pulao its incredible eatery style flavour. 😍

Heat oil in a pressure cooker. Add bay leaves, kalpasi, fennel seeds, cinnamon, cloves and star anise. Let everything release their beautiful fragrance.

Add sliced onions and sautΓ© until they turn light golden.

Add the ground paste and cook until the raw smell disappears completely. This step is important β€” cook the masala properly! πŸ”₯

Mix in the boiled soya chunks and mixed vegetables. Add salt and cook for a minute.

Pour a little water, cover and cook until the vegetables become tender.

Add the sliced tomato and cook for another minute.

Add the soaked basmati rice and pour in 3 cups of water.

Made with a freshly ground green masala of coriander seeds, jeera, garlic, ginger, coconut, green chillies, mint and coriander. Loaded with mixed vegetables and protein rich soya chunks. Ingredients
  

  • For grinding:
  • 1 tsp coriander seeds
  • 1 tsp jeera
  • 15 garlic cloves
  • 1 inch ginger
  • ΒΌ cup fresh coconut
  • 6-7 green chillies
  • 1 handful mint leaves
  • 1 handful coriander leaves
  • For pulao:
  • 2 tbsp oil
  • 2 bay leaves
  • Small piece kalpasi
  • 1 tsp fennel seeds
  • 2 cinnamon pieces
  • 5-6 cloves
  • 1 star anise
  • 3 onions sliced
  • Β½ cup soya chunks boiled
  • 1 cup mixed vegetables
  • Salt to taste
  • 1 tomato sliced
  • 1Β½ cups basmati rice soaked
  • 3 cups water
  • Little water for cooking vegetables

Method
 

  1. Grind coriander seeds, jeera, garlic, ginger, coconut, green chillies, mint and coriander into smooth paste.
  2. Heat oil in pressure cooker. Add bay leaves, kalpasi, fennel seeds, cinnamon, cloves and star anise.
  3. Add sliced onions. SautΓ© until light golden.
  4. Add ground paste and cook until raw smell disappears.
  5. Add boiled soya chunks and mixed vegetables. Add salt. Cook for a minute.
  6. Pour little water, cover and cook until vegetables are tender.
  7. Add sliced tomato and cook for a minute.
  8. Add soaked basmati rice and 3 cups water.
  9. Pressure cook for 2 whistles.
  10. Allow pressure to release naturally.
  11. Fluff gently and serve hot with raita!
