Notes

Brown the onions well β€” this is the flavour base of the entire gravy, don’t rush it.
Grind the paste smooth β€” a lump-free paste gives the gravy its silky texture.
Cook until oil separates before adding cream β€” this ensures the raw masala smell is completely gone.
Add cream on low flame β€” high heat can cause it to split.
Adjust water to get your preferred gravy consistency β€” thicker for roti, slightly thinner for naan.

Pro Tips for the Perfect Creamy Onion Capsicum Gravy

  • Brown the onions properly β€” nicely browned onions give the gravy its deep, rich base flavour
  • Smooth paste is key β€” blend the mint-cashew paste until completely lump-free for a silky gravy
  • Wait for oil separation β€” always cook the masala until the oil releases before moving to the next step
  • Low flame for cream β€” add fresh cream on low heat and stir gently to keep it from splitting
  • Don’t skip the mint β€” it adds a subtle freshness that balances the richness of the cream perfectly
  • Capsicum texture β€” cook it until just soft, not mushy, so it holds its shape in the gravy

Frequently Asked Questions

Can I skip the fresh cream?
Yes β€” replace with coconut milk for a dairy-free version, or skip entirely for a lighter gravy. The cashews already give it a creamy base.

Can I use frozen capsicum?
Fresh capsicum works best for texture and flavour, but frozen works fine in a pinch β€” just cook it a little longer.

Can I make this without cashews?
Yes β€” substitute with blanched almonds or skip entirely. The gravy will be slightly less creamy but still delicious.

Can I add paneer to this gravy?
Absolutely! Add cubed paneer after the cream and let it soak in the gravy for 2-3 minutes before serving.

A Note From My Kitchen 🀍

Sometimes the simplest combinations surprise you the most.

Onion and capsicum β€” nothing fancy. But grind them together with mint, garlic, ginger, and cashews into a paste, cook it down with spices, finish with fresh cream β€” and it becomes something truly special.

This is the kind of recipe that looks impressive on the table but takes no effort to make.

That’s the kind of cooking I love most. 😊πŸ”₯
