I remember the first time I had it β I was completely taken by how something so simple could taste so good. No fancy ingredients, no elaborate technique. Just vegetables, spices, macaroni and Amma’s hands. That’s all it takes. π

How to Make Macaroni
This macaroni is as simple as it gets β and that simplicity is exactly what makes it so special.
Take a pan and add oil. Add the chopped onions, chopped carrot and chopped capsicum. Fry everything really really well β let the vegetables get golden and slightly caramelised. This step builds the flavour base.
Add the chopped tomatoes and fry again until everything cooks nicely together β the tomatoes should soften and blend into the vegetables beautifully.
Add red chilli powder, garam masala and salt. Mix everything well. Add a little water so the masalas don’t burn. Close and cook until the vegetables and masalas are cooked really well β let everything come together.
Now add the boiled macaroni. Mix well until every piece of macaroni is coated in that beautiful masala. π
You can always adjust the masalas and spice level according to the quantity of macaroni and your own spice preference!
Finally add a little sugar and fresh coriander leaves. Mix everything well.
