Aloo Gobi Masala β potato and cauliflower cooked in a beautifully spiced onion tomato masala. A classic Indian side dish that pairs with absolutely everything. Chapathi, roti, paratha, jeera rice, dal rice β it works with all of them.
This recipe goes way back for me. To my initial days of cooking β when I was learning, experimenting and slowly finding my way around the kitchen. I learned this from my husband’s friend’s wife. She is an amazing cook and this was one of the first proper side dish recipes I learned from her.
It stayed. Of course it stayed. Because this Aloo Gobi is that good. π
There may be many versions of Aloo Gobi out there β every home makes it differently. But this is how I make it at home. Simple, flavourful and absolutely delicious.

How to Make Aloo Gobi Masala
This Aloo Gobi comes together beautifully β the secret is frying the vegetables first before adding them to the masala!

Start by frying the potato cubes and cauliflower florets in oil until lightly golden. Don’t cook them completely β just a light golden colour on the outside. Keep aside. This frying step gives the vegetables incredible texture and prevents them from becoming mushy in the masala. π

In the same oil add jeera and bay leaves. Let them splutter and release their fragrance.
Add chopped onions and sautΓ© really well until golden.

Add ginger garlic paste and cook until the raw smell completely disappears.
Add chopped tomatoes and cook until completely soft.

Now add red chilli powder, garam masala, coriander powder, jeera powder and salt. Mix everything really well. Add a little water so the masalas don’t burn and cook until the masala is well cooked and oil starts releasing. π₯

Add the fried potatoes and cauliflower. Mix well so every piece is beautifully coated in that masala. π
Add a little sugar to balance all the flavours.
Finish with lots of chopped coriander leaves.

Serve hot with chapathi, roti, paratha, jeera rice or dal rice! π€
