How to Make Potato Bhorta

The secret to this bhorta is frying every ingredient separately. Don’t rush this step โ€” each ingredient gets its own time in the oil and that’s what builds the layers of flavour.

Start by frying the garlic pods in oil until golden. Remove and keep aside. Then fry the dried red chillies in the same oil until crispy. Keep aside. Next fry the curry leaves until crisp. Keep aside.

Now the most important step โ€” fry the sliced onions really well until they change colour completely and turn golden brown. This takes patience but it’s worth every minute.

While the onions are frying, boil your potatoes until soft. Once boiled add all the masalas to the potatoes โ€” a pinch of garam masala, jeera powder and red chilli powder.

Now bring everything to a plate. Add the fried garlic, red chillies, curry leaves and golden onions. Add a whole bunch of fresh coriander. Add salt to taste.

Now mash everything together with your hands. Yes โ€” by hands! That’s the traditional way and it makes all the difference. The ingredients come together beautifully and the flavours blend in a way that no spoon or masher can achieve.

Ingredients
  

  • 15-16 garlic pods
  • 8-10 dried red chillies
  • A few curry leaves
  • 2 big onions sliced
  • 4 boiled potatoes
  • A pinch of garam masala
  • A pinch of jeera powder
  • A pinch of red chilli powder
  • A whole bunch of fresh coriander
  • Salt to taste

  6. On a plate add boiled potatoes with masala, fried garlic, red chillies, curry leaves and golden onions.
  7. Add a whole bunch of fresh coriander and salt to taste.
  8. Mash everything together well by hand.
  9. Serve immediately with hot rice.
