Our house owner was one of the most generous souls. She would give us pickles and pachadis made with such love and skill. I was a simple eater β a huge rice lover β and those pachadis with hot rice and ghee became my comfort in that new city.
One day she gave us ladies finger pachadi. I was completely awestruck. Just add it to hot rice with a spoon of ghee β pure bliss. π
She would tell my Amma how they were prepared and Amma would make it for me. That’s how this recipe came into our home β through the kindness of a neighbour in a city that was slowly becoming home.

How to Make Ladies Finger Pachadi
This pachadi is made in two beautiful steps β the masala and the ladies finger β both coming together at the end.
Start with the masala. Heat 1 tbsp oil in a pan. Add fenugreek, mustard, jeera, coriander seeds, garlic and red chillies. Fry everything together really well until fragrant and golden. Add curry leaves and coriander leaves and sautΓ© well. Switch off and let it cool completely.
Once cooled grind to a slightly coarse paste β don’t make it too smooth. That rustic coarse texture is what makes this pachadi special.
In the same pan heat more oil. Add the ladies finger and fry really really well β don’t rush this step! Properly fried ladies finger is the base of this pachadi.
Add turmeric powder and chopped tomato. Cook really well until the tomato softens completely.
Add tamarind and salt. Cook until everything softens and comes together beautifully.
Now cool this mixture slightly and mix with the ground masala paste. Keep it slightly coarse β don’t over mix. Let the textures be rustic and real.
Serve with hot rice and a generous spoon of ghee. ππ€
